Es Doctor en Ciencias Químicas por la Universidad de Zaragoza, Científico Titular de OPI’s destinado en la Estación Experimental de Aula Dei (CSIC), en la que actualmente ocupa el cargo de Director. Jesús Val es especialista en Nutrición Vegetal y en particular en el metabolismo del calcio en especies frutales. Sus líneas de trabajo relacionadas con el calcio abarcan desde el estudio de las estrategias de aplicación,  desarrollo de nuevas formulaciones e influencia en la calidad y la vida útil del fruto. Sus trabajos se detallan en más de 120 publicaciones científicas y de divulgación y se han desarrollado en  diversos cultivos, tanto frutales como hortícolas:. Manzano, melocotón, cerezo, membrillo, maíz, tomate y lechuga, son algunas de las especies en las que ha trabajado
